Sunshine Liver Brownies
Ingredient list
- 3 to 3 1/2 lbs of liver, beef or chicken
- 1 C whole wheat flour
- 4.25 oz jar fresh minced or crushed garlic
- 2 C white flour
- 1/2 C corn meal
- 1 med shaker of grated parmesan cheese
Directions
- Preheat oven to 350 degrees.
- Cover cookie sheet with foil and coat with cooking spray.
- Sprinkle foil lightly with corn meal and set aside.
- Process liver and garlic in food processor or blender until it looks like milk chocolate.
- Pour into large mixing bowl and blend in the rest of the ingredients.
- Spread evenly onto cookie sheet (the mixture will be thick) and sprinkle lightly with corn meal.
- Bake until no pink is left. I usually bake them for about 30 min for one pan and then turn the oven off but leave the brownies inside until they are cool.
Note: the baking of these has a high stink factor, so they are best made with an outside door open!
Tuna Brownies
Ingredient list
- 2 cans tuna in oil (leave a good bit of the oil)
- 2 eggs
- 1-1/2c flour (self-rising is best)
- 1 Tbsp. garlic powder
Directions
- Mix all together in a large bowl to form a large ball.
- Place on a cookie sheet.
- Press to 1/4 inch thick
- Cook at 350 for 20-25 minutes
- Cut into squares of whatever size you want (a pizza wheel works well for cutting)
Chef Louie’s Itty Bitty Leonberger Bits

Ingredient list
- 3 lb. Tripe (Green tripe preferred if you find it at a slaughter house) (it also stinks)
- 1 lb. Liver (any kind)
- 3 eggs (chicken)
- 2 C. powdered milk (I actually use multi-species milk replacer)
- 1 tsp. garlic powder
- 1 T Malt
- 1 T Brewers Yeast
- 1 T Vitamin E (I break open the capsules and squeeze out)
- 2 T Cod Liver oil (Olive oil will do)
- 1 C. Parmesan Cheese (grated)
- 5 +C. whole wheat flour
Directions
- Pre-heat oven to 327 degrees
- Put thawed tripe (I thawed mine in the sink until there were 4 Leonbergers attempting to join it) and liver into blender and blend until smooth.
- Shoo dogs away while you get eggs and cheese from fridge.
- Fight your way back to blender that is now totally surrounded by enthralled Leos and add eggs and cheese. (Some add the shells but I don’t).
- Get dogs out of wastebasket as they were trying to get liver wrapper. Take out garbage.
- Remove dog’s nose from blender (it was off). Dog drool has now made the ingredients list.
- Contemplate sending dogs out but they won’t budge.
- Add rest of ingredients except flour.
- Dump stuff from blender into large mixing bowl, note a sudden gale has arisen from 4 wildly anticipatory dog’s tails. The cats have now joined the party.
- Mix in enough flour to make a slightly sticky glob. Dogs will happily clean hands.
- Put goo into cooky press or pastry bag with a filler tip (just a round hole) a sausage stuffer would also work.
- Make a ribbon on a greased cookie pan.
- Put into oven for 10 - 12 minutes (time depends on thickness of ribbon). They will have a crust on outside, chewy inside.
- Remove from oven being careful not to burn the, "I wanna help too," dog’s noses.
- Cut into 1" pieces while still warm, scissors work well for this. Makes about a million pieces.
- Cool at a place at least as high as refrigerator top. Bag, freeze or refrigerate until ready to use. (My first batch disappeared under mysterious circumstances when I went to answer phone, after that dogs were trying to hit speed dial “call home” button on cell phone).
- Dogs will help by pre-washing utensils prior to placing into dishwasher.
Note: dogs may attempt to enter refrigerator, you may need to install a lock.
